El Dorado Diamond Port Mourant 2010

El Dorado is a brand produced by Demerara Distillers in Guyana. Guyana’s aging process is thought to have increased considerably due to high humidity and constant temperature- resulting in an 8-year-old Roma; for example, having a maturity that is claimed to be equal to that of a 16-year-old produced in lower temperature. What turns this rum from a special one into a very, very special one is production process; which involves distillation into two types of stills; as well as a marriage of rum immediately after distillation, a practice that differentiates the El Dorado approach from the traditional method; which consists in mixing the gums only after their individual maturation in barrels. Color: Intense amber. Bouquet: Intense notes of bitter chocolate , licorice and cinnamon; to which are added fine airs of vanilla and nutmeg. Taste: Complex and intensely vanilla; the taste also highlights aromas of nutmeg, cloves and wood.
