Alcoholic fermentation (100% by adding selected yeasts) is controlled at 26-28 ° C between 8-10 days, followed by hot maceration (thermo-maceration) between 5 and 8 days. Aged for about 11 months in French oak barrels. Color: Ruby with brick reflections Bouquet: Cherry jam, leaves dried, chocolate, linden flowers, vanilla Taste: Intense, juicy, ennobled chocolate notes, ripe peaches, wood, black tea and even olives. Well-balanced tannins, aided by a well-integrated alcohol.
