Wine making method: . This was followed by a light pressing and a slow fermentation, in stainless steel tanks, at a controlled temperatureof 15 and 18¡C. The wine was aged in barrels of fine yeast for 6 months. New or second-hand French oak barrels were used for this process. Tasting notes: A classic Chardonnay, in intention and result. The light pressing of the grapes, the long fermentation and the aging in oak barrels with fine yeasts, created a balanced, complex, full-bodied wine. The complex aromas are dominated by the fruity ones to which are added secondary notes of butter, roasted hazelnuts and anise flowers. In taste, it is extremely rich, with a fruity-greasy structure and a wide and persistent finish.
