Clay amphorae are considered to be the first containers in which wine was kept. Historians have used documents from Georgia to claim that winemakers used this 4,000-year-old practice. In contrast to this technique, today’s Friulian winemakers have adopted winemaking tools such as stainless steel vessels, temperaturecontrol, and barrique vessels. Indeed, Josko Gravner is a pioneer in the use of these tools. However, iconoclastic and constantly changing, Gravner adopted a new “old” approach, using amphorae. Contradiction Not. Experimentation Yes. His tireless passion for perfection through experimentation changed Gravner’s philosophy, as a result he was among the first producers to combines bio-dynamic winemaking with a more traditional style in the epicenter of Whitewine. Gravner supports open wooden vats, and extensive maceration of grape pulp, while avoiding the use of added yeast, sulfur dioxide and temperaturecontrol. In short, it supports the production of purely natural wines. Gravner uses both amphorae and large oak barrels for his wines. The grapes for these wines come from the 18 hectares of vines in Gorizia (Oslavia), which stretch on the Slovenian border with Italy. Here he exercises his current approach to wine. Gravner stated: “I am convinced that wine is produced by nature, not by man, whose role, therefore, is to accompany the maturation process while avoiding any artificial intervention.” Each bottleof Gravner wine is a testament to the pure beauty of this philosophy.
